Poached eggs荷包蛋 is usually poached not fried (煎蛋). Hence it can be “over easy”, “medium” or “well done”, but never “sunny side up”. And no one says “over hard”, it’s “well done” or “hard boiled”.

誰說荷包蛋是 poached? 你們家煎荷包蛋是用 poached? 另外 fried 可以分 deep-fried 跟 pan-fried, 荷包蛋是用 pan-fried, 要否定別人答案之前最好自己先確認是否正確.
