Poached eggs荷包蛋 is usually poached not fried (煎蛋). Hence it can be “over easy”, “medium” or “well done”, but never “sunny side up”. And no one says “over hard”, it’s “well done” or “hard boiled”.

Thanks for your comment, but actually, "I had sunny-side-up eggs for breakfast today." sounds perfectly natural.

All answers work, but each indicates a different type of 荷包蛋. Please read https://www.chtoen.com/荷包蛋的英文怎麼說 to learn how to tell them apart.

誰說荷包蛋是 poached? 你們家煎荷包蛋是用 poached? 另外 fried 可以分 deep-fried 跟 pan-fried, 荷包蛋是用 pan-fried, 要否定別人答案之前最好自己先確認是否正確.

荷包蛋 by default is poached, ie. 煮的. If you want to pan fry it you have to add “pan-fried” in front, ie. 煎荷包蛋. It’s like dumplings, no one assumes dumplings are fried unless you say pan-fried dumplings, because it is usually steamed by default.
