What is the difference between "You have to jump at the chance"and You have to take/seize/catch/snach the chance, are they all the same meaning ?

Yes. They simply mean "take the opportunity presented to you".

I couldn't agree more.
“Jump/ leap at the chance/ opportunity” figuratively means “accept an opportunity eagerly”.
Most native Chinese speakers might have to jump at the once-in-a-blue-moon chance to learn from ChToEn.com Chinese-to-English translation that would immediately come in handy.
